Cellaring Wine

If you're buying wine now that will ripen over the next few years, you'll need to keep it in good condition while you're waiting for it to mature. Here are some tips in order to protect your prized liquid assets.

 

When storing wine for the long-term, there are five important factors to consider:

 

  • Temperature - This should remain at a fairly constant cool level. All wines, whether white or red, should be stored at a constant temperature, just like a natural cellar. Recommended cellar temperature ranges are between 12C to 14C, although anything between 10C to 16C will suffice. Emphasis should be placed on minimising temperature fluctuations, and it is better to store cooler than warmer. (Wine cellars that offer dual temperature ranges are gimmicks, and add unnecessarily to the cost of the unit, so don't be fooled by them)

 

  • Humidity - This should be at a constant level. Wine benefits greatly from humidity consistency of between 50 to 70%. If it's too dry the corks may dry out and shrink thus allowing air to affect the wine. If it's too damp the labels may soil.

 

  • UV-Protection - Protection from harmful Ultra-Violet rays must be ensured. Light can damage wine;

 

  • Vibration - This should be eliminated so as not to interfere with the aging process;

 

  • Ventilation - This should be maintained at acceptable levels to eliminate bad odours.

What Makes Them Unique?

 

The answer is Dometic's Absorption technology, which makes them the only wine cellar on the market that truly is vibration free and silent. Unlike most wine cellars on the market, there is no motor, no compressor, and therefore no moving parts.
So how does it work: It uses a solution of ammonia in water, which is heated. The solution is pumped into the absorber and ammonia vapour goes up to the condenser. In the condenser, the vapour is cooled into a fluid, which runs off into the low temperature evaporator, where it evaporates into a weak ammonia hydrogen atmosphere. While evaporating, the ammonia liquid absorbs heat, creating a cold environment - thus cools the wine cellar.
