TASTING NOTES
A rich and tasty wine. Finesse and distinction. The terrain favors the harmonious development of aromas, with hints of hazelnuts and toasted almonds. Vigour and rounded structure allow it to keep a long time in bottle.
BACKGROUND
Jean-Yves Larochette cultivates 11 hectares of vines in the field of Pérelles, a family owned property of long standing. Its location in the Beaujolais and Mâcon (Burgundy south) and the diversity of soils used to make wine and raise different wine appellations of origin. Indeed, on a maximum six municipalities located 5 kilometers from the place of business, the field of Pérelles produced no fewer than six different names. Carried out with rigorous care in the cellar, the wine remains true to the traditions and methods of top Burgundian Viniculture, while adapting to new technologies.
FOOD MATCHING
It goes well with oysters, seafood, and in general everything edible that swims, or sleeps in fresh or salt water! Asparagus, sweetbreads, goat cheese, poultry, cream sauces.
