TASTING NOTES
The Premier Cru Montmains is planted on the left bank of the Serein river, on the south facing first slope. This is a clear notch up in elegance with lovely purity to the medium weighted flavours and a nose that is very, indeed overtly floral. The finish is under-pinned by plenty of racy acidity and this also finishes bone dry with nice minerality.
BACKGROUND
Domaine Jean Collet has had wine making connections going back four generations. Since 1979, when Gilles joined his father, the operation has become Domaine Jean Collet et fils. with 15 hectares of vines. the latest family member to come on board is romain. the winery and the cellar are located in the heart of the village of chablis.
FOOD MATCHING
This wine will accompany wonderfully a trout with a cream sauce or a sole “à la meunière” as well as poultry and cheeses.
