TASTING NOTES
A bright medium bodied red, slightly darker at the rim, showing its cellarage. On the nose it is very fruity, with a rush of red fruit. Red cherry flavours on the palate, and a smooth finish provides great value.
BACKGROUND
Christophe and Marie-Jo Lavau are the winemakers here. Their family have been involved in the production of wine in the Cotes de Castillon and Saint-Emilion regions for several generations. Over the last twenty years, they have gathered together some thirty hectares of vines, with the split being roughly, 70% Merlot & 30% Cabernet Sauvignon. A little Cabernet franc is grown and used for improving the blend. The vines themselves, some 3-5000 per hectare have reached a mature age and undergo single & double cane pruning, with debudding in the Spring.
3-4 weeks maceration in cement or polyester vats, with regular pumping over. (emptying the fermenting juice from the Vats back over the solid matter) Partial maturation in French oak. A combination of traditional & modern methods adopted for maximum quality.
FOOD MATCHING
A medium bodied wine this will show well with light cheese, Lamb & pork dishes, and roasted vegetables.
