TASTING NOTES
Nose of light spice before everything else comes through - rich, butterscotch, toffee apple notes. Big, full flavours of spiced apple on the palate. A great finish showing a touch of liquid tarte tatin sweetness.
BACKGROUND
The Camut family has produced calvados for almost 200 years. Their Pays d’Auge estate is planted with about 4,000 traditional hi-stemmed apple tree varieties, which give balance to the cider and subsequent distilled spirit. No pesticides are ever used and the cider is aged in oak barrels until distillation commences. Adrien Camut perfected the family’s distillation methods using the domaines’ different pot stills to produce calvados with both the power and finesse to withstand long ageing in oak. The spirit is casked in used barrels, reduced during the first two years of ageing, and moved constantly during its youth with the barrels kept partially full; this increases the oxidation, the natural reduction in strength and the development of flavours. Later, the brandy is moved to larger casks where it slumbers before bottling without filtration.
